Wild pheasant meat is very lean and healthy. The meat is more complex and subtle flavor. Many other game birds, like duck or quail, are delicious but have a stronger taste that some do not like. Wild Pheasant adds depth to curries with its rich gaminess, particularly if it has been hung for several days. Bacon and other smoked meats, as well as wild mushrooms, are other beautiful accompaniments. Wild Pheasants feed mainly on cereals and seeds together with some insects, and widely found in the south of Scotland and Scotland, particularly in the Moorfoot, Moffat, Lowther and Lammermuir Hills.
