Meat is dark, moist, tender and flavorful. Our squabs are dressed at four
weeks.
Squabs possess a characteristic which allows
them to retain more moisture during the cooking process than other poultry -
the result being a very versatile and easy bird to prepare for large or small
groups of people. Squab is known to be one of the most easily digestible of all
meats.
Squab meat is best cooked medium-rare. Squab pairs
well with red wine. It’s often served with saffron rice in Arabic and Indian
cuisine. I prefer squab stuffed with pistachios, almonds and cardamom.
