Sevruga Caviar...a delicious indulgence!
Sevruga, like Osetra are only found in Caspian Sea. The smallest of the three, the Sevruga grows to between 50 and 100 pounds and its usually 3-4 feet in length. Of the three most common sturgeon, it is the most distinctive looking, with an unusual scythe-shaped snout. The female matures quite young for sturgeon, at only seven years.
Sevruga are the most abundant species of sturgeon and produce the smallest and least expensive eggs. The roe which can range in color from dark grey to black, is the most reliably consistent in flavor, and has a more pronounced saline character than the other two varieties. The eggs of Sevruga are quite small and rather soft texture, which is not conducive to oral bursting. Sevruga is nevertheless a delicious indulgence.
